- A rib chop in which the meat and fat are cut away from the end of the rib to the point where the meat becomes lean.
- 1912, The Sheep Breeder - Volume 32, page 720:
- Dwight says, "Oh, Dick, but you ought to order a French chop with parley vous sauce."
- 2003, Harry Jordan, Meat Harry:
- To make a French chop, make sure that each chop has a rib bone; then all you have to do is remove the fatty piece of meat at the tail near the end of the rib bone and connected to the loin muscle.
